Oak Alley, Destrehan and Evergreen are the MUST SEE plantations. Destrehan is the nearest to NoLa, Evergreen and Oak Alley are further out. I would consider staying overnight at Oak Ally- it's worth it and you really get the feel of the place.
Amarillo is located near stockyard. The only reason I drove through it was on the way to Albuquerque. Cadillac Ranch is near by. It's one weird sight - all these cars sticking up out of the ground!
I have issues with your "Interestingest Interesting Place" list. You have both Kansas and Missouri yet no Oklahoma. Oklahoma is atleast as boring if not less so that both of those places. I will simply refrain from commenting on Texas.
